Dear Richard , Top marks ! we have just enjoyed some loin chops that arrived at 2pm this afternoon. I cut off the skin about quarter inch thick , & roasted it until crisp in the oven with the chops which I had seared in an iron pan first....absolutely definitive , our  son in law , grandson & grandaughter 12 & 17  said they were the most delicious pork chops they had ever eaten.......superb....thank you ....oh what have we been missing....by the way ; we ate them with Majorcan new spuds & Ormskirk summer cabbage apple sauce & my wifes excellent gravy....a feast .

Just a quick note to say thanks for the beef, it's superb. You combine an excellent service with an excellent product - a rare combination these days. It's also a pleasure to talk to people who are passionate about what they do.

Just to say the beef arrived safely yesterday and last night we had the best steak ever! Although I have always bought quality meat, nothing has tasted like this, and it was so tender and juicy.

We simply could not believe the superb flavour of your Middle White Pork or your Longhorn Beef. Meat of this quality has not graced our table for many a long year.

May we also complement your butcher on his expertise in cutting and packing the various joints. Everything arrived in tip-top condition and exactly when you told us it would. What more could anyone ask?

We have vowed that no other source of meat will be allowed in our larder and we will be in touch early in the new year for further supplies.

The leg of pork we had for the birthday party was acclaimed by everyone as the best ever tasted consequently the other cuts you sent us are being thoroughly enjoyed and your pork is constantly on request. We had two other birthday celebrations and your sirloin of beef and fore rib received similar accolades. The braising and diced steak is so tender we have had several lovely beef fondues. We can only say having avoided beef, we no longer will if we can have yours.

We shall look forward to ordering from you again in 1998 pork and beef and await with anticipation the lamb. With very best wishes to you from all my family who have helped us enjoy your delicious meat.

Congratulations on all the various skills of breeding, feeding, butchering that must go into creating such a treat. I had to write to tell you how very pleased the whole family are that we came to the Hereford County Show and found YOU !! We had our first roast with your delightful beef last weekend and the verdict was a resounding 10 out of 10.

I can just about remember eating beef with such a wonderful flavour (and that creamy, delicious tasting fat) when I was a child - you have certainly revived my taste buds and awakened those of my family.

One of the nicest things was the lack of shrinkage, I have to tell you that the joint I used was one of the smaller ones you cut for me (2lb 8oz) and it fed 4 adults and 1 child for 2 meals - brilliant!
I have received your letter about expanding your customers, and have indeed sung your praises (deservedly so) to friends who appreciate good food. I know at least one of them will be sending your return slip to you shortly. Others have asked me if it would be possible to split a box between two, as they don't have freezer space - would this be possible?

As this letter has been a long time in the writing, I have now received the pork, and have to tell you that (if its possible) we think it surpasses the beef. Never before have I roasted a pork joint that produced such abundant or such perfect crackling!! And the dripping, need I say more?
Needless to say, we are now awaiting your lamb with great expectations.
