The whole animal is divided up so that all customers
get an equal proportion of the expensive roasting cuts and less expensive stewing,
braising and mince. We are very happy to discuss any particular requirements you may have
or the size of the joints you may like.
A standard box has joints of 2 to 4 lbs in weight and weighs about 18 kg. (40 lbs) with a mixture of
joints, steaks, dice and mince etc. Or larger joints of 3 to 6 lbs when the
box will weigh about
23 kg. (50 lbs) in total. A box of 6-12 lb joints will weigh about 50 kg
(110 lbs)
We have recently
introduced a Small Fore Rib box and a Small Sirloin box. These boxes weigh
about 9 kg

Middle
White pork
Half a Middle White pig, which
produces a shoulder joint and a leg joint, both these joints can be half or whole
depending on the number of people it is envisaged they are to feed. The whole joint will
do between 10 and 12 people. There is a chump fillet joint which feeds about 5 to 7
people. In addition there are about 14 chops and normally about 11 or 12 lbs of sausages,
however some people prefer not to have sausages but to have the belly pork and or the hand
done as a joint. If there are any other butchering requirements we are happy to
accommodate them.
We have recently
introduced a Quarter Middle White box for customers with limited storage.
The weight before butchery is about 9 to 10 kg
