Huntsham
beef comes from the Huntsham Farm herd of Longhorn cattle. This
old-fashioned breed was developed 200 years ago and was the breed which
made
England
famous for its fine roast beef. It is now a Rare Breed and has been
largely forgotten, but the quality of its meat remains outstanding.
Our beef is hung for nearly five weeks so that the fine-grained,
well-marbled meat reaches its ideal maturity and full potential. The
carcase is then butchered in such a way that all customers get an equal
proportion of expensive roasting cuts and less expensive stewing, braising
and minced meat.
The
Middle White pig was the pork pig of
England
in the 1930s. However to compete with the influx of Danish bacon after the
war, farmers started to breed larger, leaner pigs for bacon. Young pigs
from these bacon breeds now give us almost all the pork in our shops and
the Middle White, which is the only specialist pork pig, is very rare. In
the 1930s the Middle White was exported to
Japan
where the Emperor would only eat pork from Middle Whites. The Japanese
have even erected a statue to this outstanding pig!

Huntsham
lamb is produced from Ryeland sheep. This breed was developed in the
Ross-on-Wye area and was called “the sweet meat of Herefordshire”. It
is exceptionally good but supplies are limited. We grow most of our lambs
slowly to produce ‘hogget lamb,’ over a year in age, which gives it a
more intense flavour but without the stringiness which mutton – meat
from sheep over two years of age and in practice often much older – can
have. We have limited supplies
of new season lamb in the summer.
Visitors
to Huntsham are always welcome to see the very high standards of welfare
to which we keep our animals and how they are reared, fed and cared for
and to meet the small band of dedicated staff who work here on the farm.
The
meat from our animals is sold on an ‘as available’ basis, all clearly
labelled and suitable for home freezing.
Will
it fit in my freezer? The
boxes we use for our beef, pork and whole lambs are 21” x 12” x 8”
(internal measurements) with smaller boxes for our small beef boxes, half
lambs, quarter pigs, mince and sausages.
Delivery:
Carriage
is by overnight carrier and all meat is packed in insulated boxes with ice
packs. Prices are inclusive of
delivery.
Collection:
Boxes
can be collected from Huntsham Farm, for which a reduction of £10 for the
larger boxes and £5 for the small boxes is given.
